Wholesome Wednesday: Chocolate Strawberry Bombs


As y'all already know I can't pass up a good cookbook.  I get inspiration from absolutely everything.  Since its so sticky hot in Chicago right now, this week's recipe had to be something that didn't require any cooking or baking.  Which kinda bites because I've been finding the most amazing baking recipes lately.  *sigh*  Those will have to wait till the weather changes.

This little Jell-O cookbook was probably a promo item and someone donated it to the library.  It's pretty darn small about 4 x 8 inches.  I liked that it had cute little desserts in it.  I thought the Chocolate Cherry Bomb sounded good, but would be better with strawberry instead of cherry.  We aren't big cherry fans at my house.  Well red cherries that is, we absolutely love rainier cherries or sour cherries.  :)

This didn't occur to me till now, but you could easily add less boiling water to the jell-o and add some alcohol instead.  Even a flavored vodka or rum.  Easy peasy adult dessert.  :)  I think these would also be awesome with a raspberry jell-o or orange.  Really anything that would compliment chocolate.  I poured mine into a dozen silicone cupcake molds but in the future I'd probably only make half a dozen because then they'd be thicker.

Chocolate Strawberry Bombs
1/3 cup boiling water
1 pkg (3 oz.) strawberry Jell-o
5 oz evaporated milk
2 squares Baker's semi-sweet chocolate, finely chopped


Add boiling water to gelatin mix in a medium bowl, stir till dissolved.


Microwave evaporated milk and chocolate in a microwave safe bowl for 2 minutes, stirring after 1 minute, until melted and mixture is blended.


Add to gelatin, whisk until blended.  Pour into muffin cups, tins, ramekins (really anything you want) coated with cooking spray.  Refrigerate till set, about 35 minutes.

SFU: Sears Photography Week 2 Path to Purchase #grillingishappiness #SoFabU

This weeks assignment in my Sears Photography class is a bit harder for me as I've never actually done a Social Fabric path to purchase shop before.  A path to purchase shop is when you go in and take photos to show what catches your eye in the store.  Companies use these to see what customers notice and think when  they go to a store to make a purchase.

Grill Display at Woodfield

My assignment was to go to Sears to shop for a new grill (which I'll actually pick up next week) taking photos showing my trip.  I decided to go to the Sears at Woodfield mall because its the closest to my house. The employees couldn't have been nicer.  I was a little nervous taking in my camera to take actual photos, but no one even noticed.  As you can see there were a bunch of grills to choose from.  Unfortunately for me they were all packed pretty close together, which made taking individual photos difficult.

After checking out everything (you can see all my photos in the slideshow below) I decided this Kenmore is probably the grill I'm going to get.  It has stainless steel grill rods and a side burner which is incredibly nifty.  The other grill I thought was incredibly interesting was this Nexgrill, which had both charcoal and gas burners or compartments.  I'm not quite sure the charcoal part would ever get used at my house though.  Seems like a lot of mess just to grill something.

SodaStream, Thirsty Thursday's anyone?


I have exciting news!!  SodaStream sent me their Jet model soda maker the other day.  I definitely wasn't expecting them to send a large selection of their syrups though.  They sent me 8 bottles of syrups to try with the SodaStream and this set of little glass bottles that are fruit essences.  Totally flabbergasted when I opened the very large, heavy box that they sent.

Especially since I want to make my own syrups out of healthy ingredients like real fruit and herbs.  And coffee and espresso and maybe choffy.  We aren't true soda drinkers in my house but the idea of using regular cold water and natural ingredients might change our minds.

The SodaStream is so incredibly easy to use.  You just need to fill the special hermetic bottle that comes with your SodaStream with cold water up to the filling line.  Then you screw it into the machine.  Next you push down on the button till you hear a loud buzzing sound.  You can choose your level of carbonation by pushing the button up to 5 more times.  I like mine at about a 2 or a 3.

As a treat and to get a not the norm group opinion, I took the SodaStream over to the prayer shawl group at Our Lady of the Wayside.  My mom is a member and she thought the ladies would like to try it out as a lot of them do drink soda.  A definite hit with the ladies although most of them liked the soda fizzed to the max instead of the light fizz we prefer.

So I'm thinking we might be having Thirsty Thursdays to go with our Wholesome Wednesdays.  Any thoughts?

LooneySpoons: Wowie Maui Chicken



Y'all know how much I love one pot/dish dinners by now, right?  This is another wonderful one that I found in the Looneyspoons Collection Cookbook.  It's like an all in one sweet and sour chicken.  I did change a few things like the amount of chicken (I used 2 large breasts), the pineapple (I used chunks and a bigger can), the rice (I figured there was no way brown rice could skillet cook in 20 minutes) and the peppers (we keep bell peppers frozen in strips in the freezer, I just grabbed enough to make a cup).  The only caveat is my rice wasn't real tender after 20 minutes and there was more liquid in my recipe than the original.  I'm thinking maybe adding a half a cup of water would do it.

The dish was very good.  Definitely an easy replacement for sweet and sour chicken that you'd get as take-out.


Wowie Maui Chicken
1 tablespoon olive oil
1 1/2 lbs chicken breast, cubed
2 1/2 cups low sodium chicken broth
1 (20 oz) can pineapple chunks, in juice; undrained
1 1/2 cups rice (uncooked)
3/4 cup finely chopped carrots
1/2 cup each chopped red and green peppers
1/3 cup ketchup
2 tablespoons brown sugar
2 tablespoons soy sauce
2 tablespoons white vinegar
2 garlic cloves, minced
3/4 cup chopped green onions

Heat olive oil in large non stick skillet over medium-high heat.  Add chicken.  Cook and stir until chicken is lightly browned, about 5-6 minutes.

Add all remaining ingredients, except green onions.  Mix well, bring to a boil.  Reduce heat to low.  Cover and simmer for 20 minutes, until rice is tender.  Add green onions during last 5 minutes of cooking time.

Wholesome Wednesday: Lemon Clover Rolls


I'm always on the lookout for a quick roll recipe.  These lemon clover rolls fit the bill.  They mix up quickly and with just a little extra prep, get in the oven fast too.  No rising time.  Something I always love.  The rolls are soft on top, nice and crunchy on the bottom and sides and fluffy inside.  A wonderful combination. They also taste slightly lemony.  Lemon clover rolls would make a great breakfast treat, snack or something special at dinner.  These are amazing fresh from the oven and they disappeared within a few minutes at my house.  I'm sure they won't last long at your house either.

I used cold unsalted butter in my rolls because we're out of shortening at the moment.  I'm sure it just made the recipe a bit richer.  You'll most likely get a flakier roll with shortening.  Also if you didn't want a lemon tasting roll, you could substitute buttermilk for the milk and lemon juice.  Let's face it, milk and lemon juice sours the milk pretty quickly causing it to curdle.  Don't be alarmed by this, your rolls will turn out just fine.  If you choose to use buttermilk it does have enough acidity in it to activate the baking soda while the rolls bake.

That's just another example of how I'm likely to alter a recipe while I'm making it.  There are always lots ways you can subtly change a recipe to more suit what ingredients you happen to have on hand.  This will save you a lot of last minute trips to the store in the future.


Lemon Clover Rolls

2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
1/3 cup shortening or unsalted butter
1/2 cup whole milk
3 tablespoons fresh lemon juice

Whisk flour, baking soda, sugar and salt in a large bowl.  Cut or rub shortening (or butter) into flour mixture until it resembles coarse meal.  Add combined milk and lemon juice, stirring quickly to form a soft dough.  Turn onto a lightly floured board.  Knead slightly, dough will still be sticky.  Separate dough into 12 equal portions.  Splitting each portion into three, roll these pieces into balls and place in one greased muffin cup.  Repeat with remaining 11 portions of dough.  Bake in a hot oven, 450 degrees, for 15-20 minutes until lightly golden brown.  When out of the oven, brush tops of rolls with cream.  Makes 12 rolls.

Wholesome Wednesday: Strawberry Blueberry Kiwi Green Tea Smoothie


The past couple of weeks I've been really interested in raw foods.  I actually found this book recently at the library called Ani's 15 Day Fat Blast which basically promotes a raw foods diet for about 15 days to lose about 10 pounds.  While everyone typically has a few pounds they'd like to lose I was more interested in adding more fruits and veggies to my diet.  If I lost a few pounds along the way that would be okay too.  But that wasn't my goal.

I did try to follow the diet for the first three days, but the veggie shakes were just gaggingly awful.  Blended romaine just has an unbelievable texture that makes you gag.  Total yuck.  But I found I quite like the fruit smoothies.  And after having them for 3 days straight, I also found that you don't need the spices and fats the author recommended to make them tastes great.  So I decided to try my own take on raw smoothies.  I'm pretty casual in what I throw in them.  Pretty much any fruit combos I happen to have on hand.  This morning it was blueberries, red grapes, strawberries and green tea.  The taste was good but the grape skins weren't good.

And I figure anyway I can get more fruit in my diet the better off I'll be.  These smoothies are surprisingly filling for only containing fruit and green tea.  I typically make a two cup size serving.  And its more than enough for breakfast, lunch or dinner.

Strawberry Blueberry Kiwi Green Tea Smoothie
1/2 lb strawberries, cleaned and sliced
2 handfuls blueberries, rinsed
2 kiwis, peeled and halved
1/4-1/2 cup brewed green tea, cooled
4-6 ice cubes


Place all fruit in blender, top with ice and pour tea over all ingredients.  Blend on high till smooth.  Pour into cup and serve.

SFU: Photography with Sears #grillingishappiness #SoFabU


I have exciting news to share with you.  I'm taking an online photography class through Social Fabric U sponsored by Sears Grilling.  I'm sure that it's making you as excited as I am, cause lets face it food photos really do make or break a blog post.  Not all of my food photos are so great.  They're definitely hit or miss.

For the next six weeks, I'll be learning how to take better photos.  Which is great because even though I love my Sony cyber shot I don't really know how to use it.  I bought it because it had all these features that were meant to help me take better photos.  For example, Monday I was at the Shedd Aquarium when I was flabbergasted to learn it had an aquarium setting.  It did make my sister's fish photos better.  See the examples:  the first photo without the aquarium setting you can see a reflection in the aquarium glass, in the second photo you just see the gorgeous jellyfish inside the aquarium with no awkward reflection.  Neither photo as been edited in anyway.

In this class I'm going to learn about photography which will include photo editing and hopefully photo composition along with other things.  If I'm lucky you will see some improvement in my photos as I progress through the course.

Wholesome Wednesday: Strawberry Curd

I cannot tell you how much I love anything with strawberries in it.  I'm not sure if I've shared my strawberry story with y'all yet.  When I was under 4 (I know I was that young because we still lived here in Illinois) we used to go strawberry picking with family.  Both my mom's dad and I absolutely loved strawberries.  And he'd be the one to watch me while everyone else went off to pick berries.  We'd start off picking one, then eating one.  Then we'd pick one and eat two.  Then pick one and eat three.  And it just went on from there.  My family always joked that they should have weighed me on the way in and on the way out from picking berries.  The two of us definitely ate more than we picked.  :)

This story comes up a lot when strawberries are in season.  But I love them anyway I can get them.  And that's true with all berries, but strawberries are special.

Recently I saw a recipe for blackberry curd in one of my really, really old cookbooks.  I'd only ever heard of lemon curd and hadn't ever tried it.  Can't say it sounded appealing.  But berry curds are something that is right up my alley.  And I don't know why I've never come across them before because the strawberry one I made is absolutely mind blowing.  I can easily imagine using it on cupcakes, as a cake filling and on cookies.  We've been using it on English muffins, bagels and toast mostly.  Haven't been doing a lot of baking due to the hot hot weather Chicago has been seeing lately.  :(

Strawberry Curd
2 1/2 cups sliced strawberries
1/4-1/2 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
3 large egg yolks
1/4 cup unsalted butter, cut into pieces

In a food processor or blender pulse the strawberries till smooth.  Use a food mill to strain out the seeds.  (Food mills are my new fave thing.  It takes no time at all to get the seeds out of berries.  If you do a lot berry purees you should definitely pick one of these up.)

In a heavy saucepan, combine sugar and cornstarch.  Add strawberry puree, lemon juice and egg yolks.  Whisk well.  Cook over medium heat for 7-8 minutes or until very thick, whisking constantly.

Remove from heat.  Gradually add butter, whisking until melted.  Let cool.  Place in jar and refrigerate.

See I told you it was incredibly easy.  And the taste is to die for.  It has a consistency of a cream cheese almost but such a bright strawberry flavor.  It's just yummy, take my word for it.  :)

That said I may possibly have to take a break in my Wholesome Wednesday posts till the weather is more agreeable.  I have an idea for next week that I've been working on that doesn't require using heat.  Past that we'll have to see.  I love posting these but can't see heating up the whole house to do them.  I tend to eat more simply in the summer with a lot of fresh fruit and veggies and grill a lot.  If y'all are interested in grill recipes I could move that way till the weather is less sweltering.  Just let me know?
