Wholesome Wednesday: Individual S'more Cheesecakes


I love s'mores!  But its hard to have them all year around as it gets pretty cold here in Chicago.  It's currently pretty cold here now, brr!

That made me think what if I could have a s'more any time of the year.  Also what if it could be healthy too?

Well this recipe combines all those things.  You get a decadently rich tasting s'more in the form of a healthy mini cheesecake!  That's right, I said healthy cheesecake.  No, it's not a trick.  You can easily have a healthy cheesecake if you use greek yogurt to replace some of the cream cheese.  Greek yogurt is awesome in this regard because it bakes the same as cream cheese would.

The s'mores flavors in this recipe come from Capella Flavor Drops.  With Capella flavor drops you get intense flavor with none of the extra calories.  I also added food coloring to the layers to highlight the flavors.

Individual S'mores Cheesecakes

Crust
1 1/2 cups graham cracker crumbs
2 tablespoons sugar
1/4 cup butter, melted

Filling
1 (8 oz.) package cream cheese, room temperature
1 1/2 cup  chobani greek yogurt
1 teaspoon vanilla
3 tablespoons flour
2 eggs
1/2 cup sugar
14 Double Chocolate Capella Flavor Drops
12 Marshmallow Capella Flavor Drops
18 Graham Cracker Capella Flavor Drops

Preheat oven to 350 degrees.  Line a 12 cup muffin tin with paper liners.

In a mixing bowl, combine together crust ingredients.  Using a tablespoon sized scoop, measure a heaping tablespoon into the bottom of each muffin cup.  Press crust down and slightly up the sides of the cup.  Set aside.

In another mixing bowl, beat cream cheese, chobani yogurt and sugar until smooth.  Add vanilla and flour.  Mix well.  Beat in eggs one at a time.

Split cheesecake filling into 3 separate bowls.  Make one bowl for each flavor, one chocolate, one marshmallow and one graham cracker, mix well.  If you want use food coloring on the layers so they stand out.  I did this to show that there were layers.  Layer the flavors starting with chocolate, then marshmallow and ending with graham cracker on top.

Bake for 20 minutes or until centers are set.  Cool to room temperature.  Either refrigerate or serve warm.

Susie Savors:  These mini cheesecakes are the perfect size.  Just enough of a treat to satisfy your cravings, yet as a dessert they are not going straight to your hips.  Using flavor drops allows you to have the same flavors without all the same calories.  The best part is that you can have a s'more without a campfire.

Chocolate Strawberry Curd Recipe


Do you know what's better than regular old strawberry curd?  Chocolate strawberry curd!

Even more awesome is the fact that the chocolate in this recipe doesn't have any guilt attached to it.  You did read that right, absolutely no guilt!  Capella Flavor Drops are becoming one of my absolutely favorite baking things.  With these drops I don't have to sacrifice calories to have amazing flavor.

Chocolate Strawberry Curd
1 pound hulled and sliced strawberries
1/2 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
3 large egg yolks
1/4 cup unsalted butter, cut into pieces
12 Double Chocolate Capella Flavor Drops

In a food processor or blender pulse the strawberries till smooth.  Use a food mill to strain out the seeds.  (Food mills are my new fave thing.  It takes no time at all to get the seeds out of berries.  If you do a lot berry purees you should definitely pick one of these up.)

In a heavy saucepan, combine sugar and cornstarch.  Add strawberry puree, lemon juice and egg yolks.  Whisk well.  Cook over medium heat for 7-8 minutes or until very thick, whisking constantly.

Remove from heat.  Gradually add butter, whisking until melted.  Add 12 double chocolate Capella flavor drops, whisk to incorporate.  Let cool.  Place in jar and refrigerate.

Susie Savors: Curd is better than jam or jelly.  The moisture is sealed into the mix.  It won't be an inconsistent texture.  The flavor of chocolate strawberry curd could even rival anything else on my breakfast toast.  The chocolate flavor adds complexity over the simple strawberry alone.  There is sweet from the strawberry and a subtle undertone of dark mellow chocolate to cut through it.  A balance of flavor that strikes the tongue as not too sweet and not too mellow.

Strawberry Margarita Roll Recipe


I have the most amazing recipe to share with y'all.  Remember those lemon clover rolls I made?  Well.....now they're even more awesome.  I thought why couldn't you have a roll that tasted like a strawberry margarita?  Cause that would totally rock!  Well now you can!

These rolls work because the lime juice activates the baking soda to make them rise.  They get the strawberry flavor from Capella Flavor Drops.  When you combine everything you get the taste of a strawberry margarita in a roll!  Which you can have for breakfast!  How often do you get to say you had a strawberry margarita for breakfast?

Strawberry Margarita Rolls

2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
1/3 cup shortening
1/2 cup whole milk
4 tablespoons lime juice
6 drops Capella Flavor Drops Strawberry

Whisk flour, baking soda, sugar and salt in a large bowl.  Cut or rub shortening into flour mixture using a pastry cutter, until it resembles coarse meal.  Combine milk, lime juice and Capella drops in another bowl.  Add to flour mixture and stir quickly to form a soft dough.  Turn out onto a lightly floured board.  Knead slightly.  Split dough into 12 equal portions.  Split each of these into three.  Roll each piece into small balls.  Place three each into a single greased muffin tin.

Bake at 450 degrees for 12-14 minutes.  For a glaze, remove from oven and while still in the pan wash with heavy cream.  Makes 12 rolls.

Susie Savors: These are the perfect sized rolls.  No matter how you like to eat them whole or one section at a time, they're delicious.  This flavor is an improvement over the lemon.  Although, you could add any flavor to them.  The strawberry margarita is a nice way to add pizzazz to your morning.

Boozy Peanut Butter Cup Recipe


Is there truly anything better than peanut butter and chocolate?  How about if you add coffee and vodka?  I don't know if better is exactly the right word.  The coffee and vodka enhances the chocolate and peanut butter.  Or ultimately a yummy frozen boozy treat.

This drink has Lulu B. Chocolate Martini, Reese's Peanut Butter Cups, coffee and Capella Flavor Drops.  Using Lulu B. Chocolate Martini and Capella flavor drops are a great way to enjoy a cocktail with less guilt than a regular cocktail.

Boozy Peanut Butter Cup

1 ounce Lulu B. Chocolate Martini
1 scant cup crushed ice
1 1/2 ounces coffee or espresso
2 teaspoons vanilla instant pudding powder
2 Reese's Peanut Butter Cups
1 ounce heavy cream
3 drops Peanut Butter Capella Flavor Drops
3 drops Double Chocolate Capella Flavor Drops
2 drops Espresso Capella Flavor Drops

Put all ingredients in a blender.  Blend till slushy.  Pour into two glasses and serve.

Susie Savors: Peanut butter and chocolate is our favorite.  Hands down.  This is just a bit of happiness in a cup.  Quite literally, if you drink a few you will be feeling better.  This is by far our favorite type of drink, tastes so good you think you're not consuming alcohol.  The burn is completely gone and all you have left is the flavor of the chocolate vodka.

Healthy Nutty-Ella Baked Oatmeal Recipe


Y'all already know how much we love baked oatmeal at my house.  It's absolutely amazing.  You can make extra and easily heat it up in the microwave and its just as amazing as if it just came fresh from the oven.  I have an extra special treat in this recipe.  Capella Flavor Drops!

What are Capella Flavor Drops you ask?  They're a great way to add amazing flavor to anything you make.  I'm going to be bringing you quite a few recipes featuring these powerhouse drops.  You literally only add a drop at a time to flavor whatever you're doing.  They are honestly that concentrated.  If you're at all like me, flavor is important to you, but you also want to watch what you're eating.  These drops are a great way to do this as they have no fat, no carbs, no gluten, no calories and no sugar.  That means they won't actually alter anything but flavor in your recipes.

The first thing that popped into my mind when I got the opportunity to use these drops was to make a healthy nutella-like baked oatmeal.  Nutella is a big fave at my house (some people have been known to hide it away so they don't have to share).  While I love nutella and hazelnuts are good for you, I don't love all the fat that comes with it.  I thought using these drops would be a great way to bring that taste to a baked oatmeal.  I've also added some butter flavored drops as there isn't really any fat in this recipe and they give it the illusion of being a rich treat.

This recipe makes 2 servings.  I typically bake mine in one cup ramekins.  I split the recipe between 4 of them because then you don't have to have an entire serving if you'd like to diversify you're breakfast.  You could easily half this recipe to make just one serving or bake it in a bigger dish.  Another note, you can use whatever liquid you like in this recipe.  I've used coconut milk, almond milk, milk and coffee creamer with great results each time.

Healthy Nutty-Ella Baked Oatmeal

1 cup oats (I use old fashioned)
1/2 teaspoon vanilla
1/2 cup unsweetened applesauce
1/2 cup milk, water, liquid
dash of salt
1-2 tablespoons of sugar or coconut sugar
2 drops Butter Capella Flavor Drops
2 drops Double Chocolate Capella Flavor Drops
2 drops Hazelnut Capella Flavor Drops

Preheat oven to 375 degrees.  Combine all ingredients in a medium bowl.  Pour into greased baking dish or ramekins.  Bake for 20 minutes or until firm.  Broil on high for 3-4 minutes.  Remove from oven.  Allow to cool for at least 5 minutes before serving.

Susie Savors:  I'm still not telling you where my Nutella stash is.  But, this is a good substitute.  Not exactly the same melt in your mouth textures, but for being oatmeal it's a pass. Plus with the drops we can control the flavors so there is no overload of one flavor over another.
