Ghiradelli Milk & Truffle Squares

Earlier this week I received a bag of the new Milk & Truffle Ghiradelli Squares from SheSpeaks.  I was excited to try these as I'm not a huge dark chocolate lover.  Initially when the bag came in the mail, we tried them and I have to say that I like them better chilled.  When I went last night to take a pic of the chocolates I found that someone else must have liked them more than me since half the bag was missing.  Those 3 chocolates you see in the picture are all that were left of the bag. 

I will say that the squares are slow melting which is nice.  But they're a little too dark chocolate in taste for me.  I've always been a milk chocolate kinda girl.  But like I said they must be good because most of the package disappeared in only a few days.  :)

Chicken Enchiladas (Perfect every time)

So these our are absolutely favorite perfect every time chicken enchiladas.  Whew!  That was a lot of descriptive words there.  :)  My family has been making these for years.  And while they're not really spicy (most of the family likes mild) they are truly tasty.


Chicken Enchiladas

1/2 cup chopped onion (I use anywhere from 1/4 to a 1/3 c)
4 tablespoons margarine or butter
1/4 cup flour
2 cups chicken broth
8 ounces sour cream
3 cups chopped cooked chicken (I use typically 2 lg. or 2 med. sized breasts)
2 cups shredded cheddar cheese
4 ounce can chopped green chilies, drained
1 teaspoon chili powder
10-14 small tortillas (typically I use flour, but I prefer corn)

1. If you have raw chicken breasts to start, I've found the best way to cook them.  Using a large microwave container, place raw chicken breasts in container and cover with chicken broth.  Following microwave instructions poach breasts till done.  When finished, remove breasts from container and place on cutting board to cool.  When cool, roughly chop chicken breasts into small bite sized pieces.  Reserve chicken broth for enchilada sauce.  (Poaching the chicken breasts in the broth adds extra flavor to it and makes your sauce that much more yummy.)

2. Preheat oven to 350 degrees.  Grease a 9 x 13 inch baking pan and an 8 x 8 baking pan.  Set aside.

3. Saute onion in margarine/butter in a medium sized saucepan until softened.  Add flour, whisk to form a roux.  Slowly pour in chicken broth, whisking constantly.  Cook till thickened, stirring occasionally.  Remove from heat and whisk in sour cream.

4.  In a large bowl, mix 1 cup cooked sauce, chopped chicken breast, 1 cup cheddar cheese, drained chilies and chili powder.  Place tortilla on cutting board or plate.  Scoop out 1/4 cup of mixture, place in center of tortilla and roll up.  Place in pan seam side down.  Repeat till all of filling is used.  (For me this recipe typically makes 14 enchiladas.  If you want them fuller you could probably get away with using 1/3 cup to make them fit in a single pan.)

5. Spoon rest of sauce over enchiladas.  Cover with remaining cheese.  Bake at 350 degrees for 25 minutes or until bubbly throughout.

Rendezvous Rock By Rickey Bray + Giveaway

Renedezvous Rock caught my attention right away.  I knew that I would love reading it because of the writing style.  I was drawn in through the words.   Few authors live up to their potential, but Bray is truly a wordsmith.  I was glad to exercise my own vocabulary.

The world building is exquisite.  As a reader being dropped into a complex world with unique circumstances, in this case witches, can be daunting.  Some novels fail because their worlds are not introduced properly.  Yet, Bray does it seamlessly.  I found myself in the shoes of Eric.  Mesmerized by the girl, Susan and wanting to know all about her reality.

She draws him into a religion through a binding or marriage of sorts.  She knows where he fits into her world and the book follows them after he is truly set onto his path.  He discovers his place in a world where power is real.  He is the typical layman having been raised with an overbearing mother and we get to see him grow.

As the front cover states, witches are never young.  You learn why as the religion of The Three Circles is revealed.  The characters are concerned not only with the past and present but with the future as well.  We get heroes that think about not just changing the present but seriously considering the aftermath as well.  Unlike most stories, which end and you think to yourself: "So, they saved the world, but then what would happen?  Aren't they left with more problems?"  This is not one of those stories, the ending is quite decisive leaving no loose ends.

Of course, there are twists and turns along the way.  The book may seem long to some, but the details suck you into this alternate reality.  Certainly, you'll want to block off a few hours of time to devour this book.  You'll want to keep reading it, or in my case loose track of time while doing so.  I look forward to reading Bray's next book.
