Wholesome Wednesday: Microbaked Apple

Today's Wholesome Wednesday doesn't have a picture unfortunately  I made it again and snapped a pic.  Because I've been reworking a recipe that I had hoped would be ready, but isn't.  So I have this to share instead.  It comes from the Drop 10 Diet book.  I just recently checked it out because I'm always looking for more healthy ideas to add to our menu.  Last night I made these Micro baked Apples and they were quite good.  There's no picture because I didn't realize that they'd be as good as they were.  Also they just look like a mess.  Not really any way to pretty them up for a photo.  :)

Micro baked Apple

Microwave a small cored apple (depending on how thick the peel is you might want to peel them too).  Fill the hole with 1 tablespoon of raisins and microwave until tender, 3-5 minutes.  Mine took about 2 1/2 minutes.  So do keep an eye on it.  Top with 1/2 cup low fat vanilla ice cream.

So the recipe couldn't be simpler.  And it tastes amazing.  Kinda like a hot apple pie without the crust.  I definitely recommend trying it out.  :)

As soon as I finish the recipe I've been playing with I'll post some photos, but you'll have to wait till next Wednesday to get all the details.
